Rich Palate Manadonese Cuisine

K2 Local Cuisines.jpg

Manadonese food is known for its bold use of spices, imparting a rich culinary experience for the well heeled traveller.  Spiciness not in chill-hot spicy, but a flavor rich in the optimum use of spices to enhance the flavor of the dishes!  Yet when required, a rich palate can be simply achieved by careful use of fresh ingredients, with gentle use of spices!

Level of the chili spiciness is adjusted to the guests' taste.

Some cuisines we recommend to our guests include:

  • Woku: A dish that can be made with fish, chicken, or seafood, cooked in a vibrant yellow sauce made from turmeric, lemongrass, lime leaves, and chilies.

  • Smoked fish, chicken or other seafood: while this resembles a BBQ, it really is a method to cook with heat and smoke from coconut shells, imparting a uniquely Manadonese flavor where the aroma of coconut permeates the meat and the air, giving it a rich ambience to dine in!

  • Bubur Manado: a hearty porridge made from rice and various vegetables like pumpkin, corn, kangkung, lime leave, sweet potato and basil leaves.

  • Rica-rica: the name highlights the dish's characteristic heat and bold flavors, central to the fiery nature of Manadonese cuisine.

  • Dabu-dabu: this is technically not a dish, but a dip sauce with a generous serving of tomato, lime and chili to impact a vibrant combination of tangy, spicy, and slightly sweet flavors.  This is often used to enhance the flavor of BBQ or fried meat dishes.

Aromatic Balinese Delicacies

Balinese food probably does not need any further introduction, it is well known the world around.  Baliness food has a strong aromatic characteristic, highlighting a strong sensory palate character through its fragrant use of herbs and spices.

Some cuisines we recommend to our guests include:

  • Gado-gado: a popular Indonesian salad featuring a mix of blanched and raw vegetables, tofu, tempeh, and boiled eggs, served with a rich and savory peanut sauce.

  • Nasi goreng: a flavorful Indonesian fried rice, cooked with sweet soy sauce, garlic, shallots, chilies, and served with various accompaniments like eggs, prawns, and crispy shallots.

  • Tempe Mendoan: a popular dish made from thinly sliced tempeh, which is fermented soybean cake, coated in a spiced batter and deep-fried until golden and crispy. The batter typically includes flour, garlic, coriander, and turmeric, giving it a flavorful and aromatic profile. Tempe Mendoan is usually served with a soy-based dipping sauce, often mixed with chilies and shallots, making it a delicious and savory snack or side dish.
